
Smokey Joe’s Corn & Cheese Muffins
Makes 24 muffins
The natural hickory flavor of Dofino® Smoked Gouda is a perfect backdrop for these fresh corn muffins. This is definitely an easy way to take your same-old cornbread and upgrade it to great!
Ingredients
2 cups white cornmeal
½ cup flour
3½ tablespoons baking powder
½ teaspoon baking soda
1 teaspoon salt
1½ cups buttermilk
2 eggs
2 tablespoons Lurpak® Unsalted Butter, melted
2 cups grated Dofino® Smoked Gouda
4 cups corn kernels
Baking pans: 2 12-cup muffin tins, buttered
Methods
1. Preheat the oven to 400°F. Combine the cornmeal, flour, baking powder, baking soda, and salt. Stir in buttermilk and eggs, just until blended. Stir in the butter, cheese, and corn kernels.
2. Transfer the batter to the muffin tins. Bake for 25 minutes. Cool in the pan for 10 minutes before removing to cool completely.
