
5-Minute Mashed Potato Upgrade
Mashed potatoes, especially this time of the year, are a perfect stick-to-your-ribs type of side dish. But how can we go for the upgrade on this classic? With Dofino Havarti, of course! (Recipe adapted from Wisconsin Cheese website.)
Ingredients
2 1/2 pounds russet potatoes, cut into chunks
2 cups (8 ounces) Dofino Havarti, shredded
1 cup milk
1/2 teaspoon salt
1/2 teaspoon coarse ground pepper
1/2 cup Italian flat-leaf parsley
Methods
In a 3-quart saucepan, boil potatoes until tender (20 to 30 minutes). Drain potatoes; add the Havarti cheese. Mash the potatoes. Stir in milk, salt, pepper, and parsley. Spoon potatoes onto individual plates -- serve with with sauerkraut and portions of sausage for a truly perfect October meal!
