
Spinmeister Mac n Cheese
MAKES 8-10 SERVINGS
Spinach gives mac n cheese a new “spin”! Also, new enriched and whole grain pastas give you healthy options, and a casserole filled with vegetables turn this side dish into a complete meal. Just don’t tell the kids that it’s good for them!
Ingredients
3 ¼ cups (12 ounces) spinach
Veggies of your choice, such as cauliflower or broccoli
Elbow macaroni
7 ounces evaporated milk
1 egg
½ cup grated Parmesan
1 cup goat cheese
3 cups Dofino® Havarti with Dill
Methods
1. Cook the pasta in boiling salted water until tender, yet firm to the bite. Drain and set aside.
2. Transfer pasta to a mixing bowl and add evaporated milk, egg, 1/4 cup Parmesan, goat cheese, and 2 cups Dofino® Havarti with Dill. Stir until cheese melts; season with salt and pepper to taste. Fold in broccoli, cauliflower, and spinach, then transfer to casserole or baking pan. Layer tomato slices over the top; set aside.
3. In a small bowl, toss the remaining Parmesan, Dofino® Havarti with Dill, and bread crumbs. Cover tomatoes with bread crumb mixture. Bake at 350°F until crust is golden brown, about 25 minutes.
