Pulled Chicken Tacos with Dofino Havarti with Jalapeño
This is a perfect family dinner, because everyone can get into the action and create their own taco, their way! Dofino® Havarti with Jalapeño makes the preparation simple because it is easy to shred, and it adds the soft texture that makes these tacos a hit!
½ cup olive oil
½ cup chopped fresh cilantro leaves
½ cup fresh orange juice, about 1 orange
1/3 cup fresh lime juice, about 2 limes
2 tablespoons white vinegar
2 cloves garlic, finely chopped
1 jalapeño, minced
Salt and pepper to taste
1½ pounds boneless and skinless chicken, cut into strips
8 crisp taco shells or soft tortillas
1 cup shredded Dofino® Havarti with Jalapeño
1 cup shredded lettuce
½ cup chopped tomatoes
½ cup diced avocado
Prepare the marinade: Whisk the olive oil, cilantro, orange juice, lime juice and vinegar together. Stir in the garlic, jalapeño, salt and pepper. Reserve ¼ of the marinade and pour the rest into a glass-baking dish. Add the chicken and refrigerate for at least 1 hour or up to 6 hours.
Remove the chicken from marinade and sauté in a medium-hot skillet until thoroughly cooked, about 7½ minutes per side. Pull the chicken meat into bite size pieces. Layer the taco shell with chicken, shredded Havarti cheese, lettuce, tomato and avocado. Drizzle reserved marinade over each taco and serve!
