
Kos Bay Vegetable Salad
Bring a little flavor of the Mediterranean home with this tomato and vegetable salad. The subtle flavor of Dofino® Havarti with Dill blends with the fresh mint and lemon, creating a refreshing summer taste.
Ingredients
2 pints red and yellow cherry tomatoes, cut in half
2 Kirby cucumbers, peeled and cut into ½-inch thick slices
1 small red or yellow bell pepper, seeded and thinly sliced
½ medium red onion, peeled and thinly sliced
¼ cup chopped parsley
¼ cup edamame
¼ cup kalamata olives, pitted
8 button mushrooms, washed and thinly sliced
4 ounces Dofino® Havarti with Dill, cut into rectangles 1x1/2-inch
3 tablespoons olive oil
2 tablespoons fresh lemon juice
½ teaspoon chopped oregano
½ teaspoon chopped mint
Methods
1. Gently toss together the tomatoes, cucumber, pepper, onion, parsley, edamame, olives, and mushrooms.
2. In a small bowl, whisk the olive oil, lemon juice, oregano, and mint. Season with salt and pepper and toss in the cheese. Fold into the salad mixture.
3. Arrange the greens on the serving platter and top with the salad mixture. Add remaining cheese on top. Serve within two hours.
