Kicked-up Caprese Sandwich

This sandwich was the winner of our “Upgrade to Great!” sandwich contest on Facebook. The task was simple: Upload a photo of how you can take your same-old sandwich and upgrade it using Havarti! The winner, Jennifer D. from LA, came through with flying colors, and won $200 and a place in our nationwide promotion in grocery stores this summer!
2 cups grape tomatoes, cut in half
1 small shallot, thinly sliced
1 tablespoon olive oil
Kosher salt and black pepper to taste
2 country rolls
4 tablespoons basil pesto
4 thin slices prosciutto
4 slices Dofino® Creamy Havarti
1. Preheat the oven to 350°F. Combine the tomatoes with the shallot and olive oil in a small mixing bowl. Season with salt and pepper. Transfer to baking pan and roast for 20 minutes.
2. Cut the rolls in half and liberally spread pesto on both cut sides. Layer the mixed baby greens, prosciutto, and Havarti on the bottom half of the roll. Top with tomato mixture and enjoy while warm.
