
Breakfast Casserole
MAKES 8 SERVINGS
This cowboy breakfast is the perfect way to begin any special day.
Ingredients
1 cup sliced green onions
½ cup diced green bell pepper
½ cup chopped celery
2 tablespoons canola oil
4 cups crushed tomatoes
2 cups small cubed bread
2 cups (8-ounce package) grated Dofino® Havarti with Jalapeno
8 eggs
Salt and pepper to taste
Baking pan: 2 quart baking casserole
Methods
1. Preheat the oven to 350F.
2. Sauté green onions, bell pepper and celery in the hot oil until softened, about 5 minutes. Add the tomatoes and simmer over medium heat until water evaporates, about 20 minutes. Remove from heat and stir in bread cubes.
3. Transfer half the tomato mixture to the baking dish. Sprinkle it with half the cheese. Top with remaining of the tomato mixture and then the rest of the cheese.
4. Make 8 impressions in the mixture using the back of the spoon. Crack the eggs and add one into each impression. Bake until the whites set, about 20 minutes. Season with salt and pepper before serving.

i’ve not seen the Havarti with jalopeno yet…..but will try this one! yummy!!!
