
Big Sky Vegetable Pasta
Bring the taste of summer alive with the colorful combination of Dofino® Creamy Havarti, vegetables, and lime. Want more protein? Add warm grilled salmon!
Ingredients
1 pound fusilli (corkscrew) pasta
1 cup fresh corn kernels, cooked
1 cup edamame, cooked
2 cups diced Dofino® Creamy Havarti
1 pint cherry tomatoes, halved
½ cup thinly sliced basil
4 cups baby arugula
4 tablespoons olive oil
3 tablespoons lime juice
1 tablespoon mustard
Salt and pepper to taste
Methods
1. Cook the pasta in boiling salted water according to the directions on the box. Drain and transfer to a large mixing bowl.
2. Toss the pasta with the corn, edamame, cheese, tomatoes, and basil.
3. Whisk the olive oil, lime juice, and mustard together and season. Toss with pasta mixture and cheese. Season with salt and pepper.
4. Transfer to a platter with a bed of baby arugula.
