Dofino Gouda is a marvelously versatile cheese. It is a creamy, hard cheese covered in a wax rind with a mild flavor. Gouda melts beautifully for a wonderful addition to your family meals.
Gouda’s character comes from the careful craftsmanship developed by European cheese artisans. It is named after the city of Gouda in the Netherlands, which was the center of the local cheese trade hundreds of years ago. Each week, farmers in the region would gather at the “Waag” to weigh their cheese to be sold. This weigh house was recently converted to a museum, where tourists can learn more about the history and tradition of Gouda production.
As the American West was being settled, Wisconsin’s rich fields attracted the dairy farmers and cheesemaking masters of old Europe. Today, Dofino Gouda is still made by the descendants of those masters in the European tradition.
